Sourdough Peanut Butter Cookies

You are going to love these sourdough peanut butter cookies! These chewy cookies are perfectly sweet and salty thanks to a generous amount of peanut butter and a final roll in granulated sugar.

Beat butter, shortening, vanilla extract, and sugars until light and fluffy.

Scrape down sides of bowl. Add sourdough discard, peanut butter, and eggs. Mix until just combined. Add dry ingredients and mix until combined.

Scoop cookie dough into a small bowl of sugar. Roll in sugar and place on a prepared cookie sheet.

Use a fork to lightly flatten the cookies. Place in the oven for 375 degrees Fahrenheit for 8-10 minutes. (Hint: do a test cookie first)
