This Pumpkin Streusel Coffee Cake is soft, moist, and warmly spiced, with a buttery cinnamon streusel ribboned right through the center and piled generously on top.

If you love a streusel-topped cake for breakfast or brunch, you'll also want my sourdough discard coffee cake and brown butter peach coffee cake next; and if it's that cozy pumpkin-and-spice combination you're chasing, my pumpkin cream cheese cinnamon rolls scratch the same itch.

Why you'll love this recipe

  • Streusel in two places, not just one. Most coffee cakes only top the batter with streusel — this one layers a ribbon of it right through the center too, so every bite gets that buttery cinnamon crumb, the same technique I use in my New York-Style Applesauce Crumb Cake.
  • Genuinely moist, not just spiced. Pumpkin puree and full-fat sour cream keep this cake soft for days — it's not just a vehicle for streusel, it's a good cake in its own right.
  • Big, bakery-style crumbs. Squeezing the streusel together by hand before it goes on the cake gives you a mix of fine crumbs and larger chunks, instead of a sandy, uniform topping.
  • An easy addition to a fall breakfast spread. Cut into squares, this pairs beautifully with a big pot of coffee and whatever else is on the table — much like my sourdough pumpkin cream cheese muffins do.

Ingredients You'll Need

The ingredients needed for streusel-topped pumpkin coffee cake.
  • Pumpkin puree — use 100% pure pumpkin puree, not pumpkin pie filling; weighing it out gives you the most consistent texture from can to can.
  • Pumpkin pie spice and ground cinnamon — used in both the cake and the streusel for warm, layered spice in every bite, the same double dose I use in my chewy pumpkin cookies.
  • Full-fat sour cream — adds moisture and a subtle tang that keeps the crumb tender.
  • Light brown sugar — used in both the cake and streusel for a deeper, more caramelized sweetness than granulated sugar alone.
  • Unsalted butter, melted — for the cake and the streusel; melted butter is what gives the streusel that easy, squeeze-together texture.
  • All-purpose flour — the base for both the cake and the streusel; no need to sift, just whisk it well with the spices.

See recipe card for quantities.

Easy Substitutions & Variations

  • No pumpkin pie spice: Make your own with ½ teaspoon cinnamon, ¼ teaspoon ginger, and a pinch each of nutmeg and cloves.
  • Nuts in the streusel: Fold ½ cup of chopped pecans or walnuts into the streusel for extra crunch, similar to the streusel in my coffee and walnut loaf cake.
  • Bigger pan, thinner cake: This recipe is built for an 8x8-inch pan for a tall, generous square. For a 9x13-inch pan, expect a thinner cake and a shorter bake time — start checking around 30–35 minutes.
  • More streusel technique: If you love a thick, chunky streusel, the squeeze-and-crumble method here works the same way it does in my easy apple pie crumb bars — press portions together by hand rather than just stirring.
  • Dairy-free leanings: Use a dairy-free sour cream and dairy-free butter in both the cake and the streusel; the results are very close to the original.

How to Make Pumpkin Coffee Cake

Note: I bake by weight for accuracy. Cup measurements are approximate and may vary depending on how you scoop.

Step 1: Prep the pan and make the streusel. Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan and line it with parchment paper, leaving an overhang on two sides for easy removal. In a medium bowl, whisk together the brown sugar, flour, cinnamon, pumpkin pie spice, and salt. Pour in the melted butter and stir with a fork until evenly moistened and crumbly, then use your fingers to squeeze some of the mixture into larger chunks. Set aside.

Step 2: Whisk the dry ingredients. In a separate medium bowl, whisk together the flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.

Step 3: Mix the wet ingredients and combine the batter. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add the eggs and whisk until smooth, then whisk in the pumpkin puree, sour cream, and vanilla until completely combined. Add the dry ingredients and gently fold together with a rubber spatula just until no dry streaks remain — the batter will be fairly thick.

Step 4: Layer the streusel through the center. Spread half of the pumpkin batter evenly into the prepared pan. Sprinkle a third of the streusel evenly over the batter, then dollop the remaining batter over the streusel and gently spread it together with an offset spatula, taking care not to disturb the streusel underneath. Crumble the remaining streusel over the top, keeping plenty of larger chunks.

Step 5: Bake. Bake for 50–60 minutes, checking around the 48–50 minute mark. The cake is done when the center is set and a toothpick inserted into a cake portion comes out clean or with a few moist crumbs (an internal temperature of about 200–205°F is a good check too). If the streusel is browning too quickly, loosely tent the pan with foil.

Step 6: Cool and slice. Let the coffee cake cool in the pan for at least 30–45 minutes, then use the parchment overhang to lift it out. Slice into squares and serve slightly warm or at room temperature.

Weigh your ingredients! Using a kitchen scale ensures your measurements are accurate, which is key for getting consistent results in baking. It takes the guesswork out of measuring and helps your recipes turn out exactly as intended every time.

Expert Tips

  1. Weigh the pumpkin puree. Cans vary more than you'd expect — weighing out 225g rather than using a full can keeps the texture consistent every time.
  2. Squeeze the streusel into chunks. After mixing, press portions of the streusel together with your fingers. A mix of fine crumbs and larger chunks is what gives this that bakery-style topping.
  3. Don't overmix the batter. Fold just until the dry streaks disappear — overmixing develops gluten and can make the cake tougher and less tender.
  4. Use a light-colored metal pan. It gives the most predictable bake time; glass or ceramic pans conduct heat differently and may need extra time in the oven.
  5. Tent with foil if needed. If the streusel is browning before the center finishes baking, loosely tent the pan with foil so the top doesn't overbake while the middle catches up.

What Makes This Recipe Special?

Most coffee cakes put all their streusel on top, but this one hides a ribbon of it right through the middle of the cake too, so instead of streusel living only in the first bite, it shows up in every single one. It's a small structural change with a big payoff, and it's the same layering trick that makes my sourdough discard coffee cake such a favorite in my house.

The other detail that sets this apart is the streusel itself. Squeezing portions together by hand after mixing creates a mix of fine crumbs and larger chunks instead of a uniform, sandy topping.

Pumpkin Coffee Cake FAQs

Can I use pumpkin pie filling instead of pumpkin puree?

No, pumpkin pie filling is pre-sweetened and spiced, which will throw off both the sweetness and texture of the batter. Use 100% pure pumpkin puree.

Can I make this coffee cake ahead of time?

Yes. It keeps well tightly covered at room temperature for up to 2 days, so it's a great make-ahead option for a brunch or gathering.

Why is my streusel sinking into the coffee cake?

A little settling is normal, especially for the streusel layered through the center. If it's sinking dramatically, the batter may be too thin. Make sure you're not overmixing or adding extra liquid.

Can I freeze this pumpkin coffee cake?

Yes. Wrap cooled squares tightly and freeze for up to 2 months. Thaw at room temperature or warm gently in the microwave before serving.

Can I bake this coffee cake in a different-sized pan?

Yes — see the substitutions section for a 9x13-inch version. Expect a thinner cake and a shorter bake time.

  • 2 large eggs room temperature
  • 225 g pumpkin puree about 1 cup
  • 120 g full-fat sour cream room temperature (½ cup)
  • 2 teaspoons vanilla extract

Instructions

Make the Streusel

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan and line it with parchment paper, leaving an overhang on two sides for easy removal.
  • In a medium bowl, whisk together the brown sugar, flour, cinnamon, pumpkin pie spice, and salt.

  • Pour in the melted butter and stir with a fork until the mixture is evenly moistened and begins forming crumbs. Use your fingers to squeeze some of the mixture together to create larger chunks. Set aside.

Make the Batter

  • In a medium bowl, whisk together the flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.
250 g all-purpose flour, 1½ teaspoons ground cinnamon, 1 teaspoon pumpkin pie spice, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon fine salt
  • In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add the eggs and whisk until smooth. Whisk in the pumpkin puree, sour cream, and vanilla until completely combined.
    115 g unsalted butter, 150 g light brown sugar, 50 g granulated sugar, 2 large eggs, 225 g pumpkin puree, 120 g full-fat sour cream, 2 teaspoons vanilla extract
  • Add the dry ingredients to the wet ingredients and gently fold together with a rubber spatula until just combined. Stop mixing as soon as no dry streaks of flour remain. The batter will be fairly thick.

Assemble and Bake

  • Spread half of the pumpkin batter evenly into the prepared pan. Sprinkle a third of the streusel evenly over the batter.
  • Dollop the remaining pumpkin batter evenly over the streusel. Gently spread the dollops together with an offset spatula, taking care not to disturb the streusel underneath. Crumble the remaining streusel over the top, keeping plenty of larger chunks.
  • Bake for 50–60 minutes, beginning to check around the 48–50 minute mark. The cake is done when the center is set and a toothpick inserted into a cake portion comes out clean or with a few moist crumbs. If the streusel is browning too quickly, loosely tent the pan with foil.
  • Allow the coffee cake to cool in the pan for at least 30–45 minutes before using the parchment paper to lift it out. Slice into squares and serve slightly warm or at room temperature.

Notes

Pumpkin puree: Use 100% pure pumpkin puree, not pumpkin pie filling. For the most consistent texture, weigh out 225 grams rather than using an entire can.
Don't overmix: Once the flour is added, mix only until combined. Overmixing can make the cake tougher and less tender.
Create big streusel crumbs: After mixing the streusel, squeeze portions together with your fingers. A combination of small crumbs and larger chunks creates that bakery-style crumb topping.
Metal pan: A light-colored metal pan will give you the most predictable baking time. If using glass or ceramic, the cake may take longer to bake through.
Storage: Store tightly covered at room temperature for up to 2 days or refrigerate for up to 5 days.
