These Bakery-Style Banana Blueberry Muffins have everything I look for in a bakery muffin: tall domed tops, a buttery crumb, and pockets of juicy blueberries in every bite.

They're built on the same moist, sour cream-enriched base as my bakery-style banana blackberry muffins, swapped over to blueberry for a classic pairing.

Why you'll love this recipe

  • Bakery-tall. A hot 425°F start followed by a drop to 350°F is what gives these their signature domed tops, the same double-temperature trick I use in my bakery-style sourdough apple muffins.
  • Extra moist, for days. Mashed banana, full-fat sour cream, and melted butter keep the crumb soft well past the first day.
  • A full cup of banana. These lean into real banana flavor with a generous amount of very ripe mashed banana, not just a hint of it.
  • Loaded with blueberries. Fresh blueberries go both into the batter and pressed on top, so every muffin shows off plenty of fruit.
  • Refreshingly simple to finish. Just a sprinkle of turbinado sugar for a crackly, sparkling top, no streusel or glaze required.

Ingredients You'll Need

The ingredients needed for banana blueberry muffins with labels.
  • All-purpose flour: the base of the batter; a spoonful more gets tossed with the blueberries separately to help keep them suspended instead of sinking.
  • Baking powder and baking soda: the leavening team responsible for the tall, domed tops.
  • Ground cinnamon and fine sea salt: round out the sweetness without announcing themselves.
  • Melted butter: adds richness and helps keep the crumb tender.
  • Light brown sugar and granulated sugar: the brown sugar brings moisture and a little caramel depth, similar to the sugar blend I use in my sourdough discard banana muffins.
  • Eggs and vanilla extract: for structure and flavor.
  • Very ripe mashed banana: the star flavor; the riper and spottier, the better.
  • Full-fat sour cream: the secret to a moist, tender crumb that holds up for days.
  • Whole milk: loosens the batter to the right consistency.
  • Fresh blueberries: folded into the batter and pressed on top; tossing them in flour first helps keep them from sinking to the bottom.
  • Turbinado sugar: sprinkled generously over the tops before baking for a crisp, sparkly finish.

See recipe card for quantities.

Easy Substitutions & Variations

  • Frozen blueberries: these work in a pinch; add them straight from the freezer and expect the batter to turn slightly purple in places.
  • No sour cream: full-fat plain Greek yogurt substitutes evenly.
  • Add a citrus lift: a little lemon zest in the batter pairs beautifully with blueberries, the same way I use it in my lemon blueberry mascarpone cake.
  • Swap the fruit: blackberries work well in place of blueberries if that's what you have on hand, much like in my bakery-style banana blackberry muffins. If you want to try another banana recipe, try my banana bread cinnamon rolls too.

How to Make Banana blueberry Muffins

Note: I bake by weight for accuracy. Cup measurements are approximate and may vary depending on how you scoop.

Step 1: Mix the batter. Whisk the flour, baking powder, baking soda, salt, and cinnamon together in one bowl. In a separate large bowl, whisk the melted butter with both sugars, then whisk in the eggs and vanilla, followed by the mashed banana, sour cream, and milk.

Add the dry ingredients to the wet ingredients and fold gently just until a few streaks of flour remain.

Step 2: Fold in the blueberries. Toss the blueberries with a tablespoon of flour, then fold them in, stopping as soon as the batter comes together.

Step 3: Rest the batter. Let the batter sit at room temperature for 15 minutes; this thickens it slightly and helps the muffins rise taller.

Step 4: Fill and top. Divide the batter evenly among 12 lined muffin cups, filling them all the way to the top with the batter slightly mounded. Press a few extra blueberries onto each muffin and sprinkle generously with turbinado sugar.

Step 5: Bake in two stages. Bake at 425°F for 5 minutes, then, without opening the oven door, reduce the temperature to 350°F and bake for another 15 to 19 minutes, until deeply golden and a toothpick comes out clean or with a few moist crumbs. Cool in the pan for 10 minutes before moving to a wire rack.

Weigh your ingredients! Using a kitchen scale ensures your measurements are accurate, which is key for getting consistent results in baking. It takes the guesswork out of measuring and helps your recipes turn out exactly as intended every time.

Expert Tips

  1. Fill the wells all the way. This batter is meant to mound above the liners before baking; a full well is what gives you a proper bakery-style dome.
  2. Don't skip the hot start. The initial blast of 425°F heat is what kicks off that quick rise before the oven drops to 350°F to finish baking through.
  3. Use very ripe bananas. The riper the banana, the more flavor and natural sweetness it brings, similar to the ripe bananas I always reach for in my pumpkin banana bread.
  4. Toss the blueberries in flour. That light coating helps keep them suspended through the batter instead of sinking to the bottom of the liner.
  5. Don't swap the sour cream. It's doing as much work for moisture here as it does in my chocolate sour cream pound cake cupcakes, so don't be tempted to skip or skimp on it.

What Makes This Recipe Special?

Most banana muffin recipes treat blueberries as an afterthought, folded in at the very end with no real technique behind them.

Tossing the berries in flour first and pressing extra ones on top, paired with the two-stage bake, is what gives these muffins both a properly domed bakery top and blueberries that stay distributed all the way through, the same layered approach to fruit and structure I use in my sourdough pumpkin banana muffins.

Banana blueberry Muffin FAQs

Can I use frozen blueberries in muffins?

Yes, add them straight from the freezer without thawing; just know the batter may turn slightly purple in places as they bake.

Why does the muffin batter need to rest for 15 minutes?

The short rest thickens the batter, which helps the muffins hold their shape and rise into taller domes instead of spreading out.

Can I make these into mini banana muffins?

Yes, though you'll need to reduce the bake time significantly; start checking around 12 minutes total, similar to the timing I use for mini versions of my pumpkin banana bread muffins.

Do I need to use full-fat sour cream in muffins?

Full-fat gives the moistest results, but low-fat sour cream or full-fat Greek yogurt both work as substitutes.

Storage

Store the muffins in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days.

They also freeze well, just like my sourdough discard coffee cake loaf; wrap individual muffins tightly and thaw at room temperature.

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon fine sea salt
  • ½ teaspoon ground cinnamon
  • 113 g unsalted butter melted and slightly cooled (½ cup)
  • 150 g light brown sugar packed (¾ cup)
  • 50 g granulated sugar ¼ cup
  • 2 large eggs room temperature
  • 1 tablespoon vanilla extract
  • 230 g banana mashed and very ripe (1 cup)
  • 120 g full-fat sour cream ½ cup
  • 60 g whole milk ¼ cup
  • 250 g fresh blueberries 1 ¾ cups
  • 1 tablespoon all-purpose flour for tossing with the blueberries
  • 35 g additional fresh blueberries ¼ cup for topping
  • Turbinado sugar for topping

Instructions

  • Preheat the oven to 425°F (218°C). Line a standard 12-cup muffin pan with paper liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
250 g all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, ¾ teaspoon fine sea salt, ½ teaspoon ground cinnamon
  • In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar.
    113 g unsalted butter, 150 g light brown sugar, 50 g granulated sugar
  • Add the eggs and vanilla and whisk until smooth and well combined. Whisk in the mashed banana, sour cream, and milk.
    2 large eggs, 1 tablespoon vanilla extract, 230 g banana, 120 g full-fat sour cream, 60 g whole milk
  • Add the dry ingredients to the wet ingredients. Fold gently with a rubber spatula until just a few streaks of flour remain.
  • Toss the blueberries with 1 tablespoon flour, then gently fold them into the batter. Stop mixing as soon as the batter is combined.
    250 g fresh blueberries, 1 tablespoon all-purpose flour
  • Let the batter rest at room temperature for 15 minutes. This helps thicken the batter and encourages taller muffin tops.
  • Divide the batter evenly between the 12 muffin cups, filling them all the way to the top with the batter slightly mounded. Press a few additional blueberries onto each muffin and sprinkle generously with turbinado sugar.
35 g additional fresh blueberries, Turbinado sugar
  • Bake at 425°F for 5 minutes. Without opening the oven door, reduce the temperature to 350°F (177°C) and bake for another 15-19 minutes, or until the muffins are deeply golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack.

Notes

  1. Fill the muffin wells completely; this batter is intentionally thick enough to mound slightly above the liners before baking.
  2. The initial blast of heat at 425°F helps the muffins rise quickly and create tall domes.
  3. Use very ripe bananas and full-fat sour cream. The combination of banana, sour cream, brown sugar, and melted butter keeps these muffins soft and moist for several days.
  4. Do not overmix the batter; fold only until the flour disappears.
  5. Measure the mashed banana if possible; 230 g gives plenty of banana flavor and moisture without making the muffins gummy or overly heavy.
  6. Fresh blueberries work best for tall, clean-looking bakery muffins. If using frozen, add them directly from the freezer and expect the batter to turn slightly purple in places.
