Why you'll love this recipe
- One dough does double duty. The same shortbread dough forms both the crust and the crumble on top, so there's only one component to mix.
- A creamy, custard-style center. The pumpkin filling sets up rich and sliceable, closer to pie filling than a cakey pumpkin bar.
- Big, chunky crumbles. Leaving the topping in large pieces gives these that bakery-style crumb bar look, the same texture I aim for in my easy peach crumb bars.
- Easier than pie. No crimping a crust or worrying about a soggy bottom; the par-baked shortbread base handles that for you.
- Make-ahead friendly. These need to chill before slicing anyway, so they're a good one to bake a day ahead, the same way I plan around chill time for my pumpkin banana bread muffins.

Ingredients You'll Need

- All-purpose flour: the base of the shortbread, used in both the crust and crumble, plus a small amount in the filling to help it set.
- Granulated sugar: sweetens the shortbread and helps it turn golden as it bakes.
- Melted butter: binds the shortbread into a soft, crumbly dough instead of a traditional cut-in pastry.
- Pumpkin puree: the base of the filling; make sure it's puree, not pie filling.
- Light brown sugar: sweetens the filling with a little extra depth than white sugar alone.
- Egg and egg yolk: give the filling its custard-like set, similar to the structure I rely on in my sourdough pumpkin bread.
- Heavy cream: adds richness and a smooth, sliceable texture to the filling.
- Cinnamon, ginger, nutmeg, and cloves: the classic warm-spice blend that makes this taste like pumpkin pie.
- Vanilla extract and fine sea salt: used in both the shortbread and the filling to round out the flavor.
See recipe card for quantities.
Easy Substitutions & Variations
- Pumpkin pie spice swap: if you have a pre-made blend on hand, 2 teaspoons of it can replace the individual spices.
- Dairy swap: full-fat coconut cream works in place of heavy cream for a dairy-free filling.
- Extra crunch: press chopped pecans into the crumble topping before baking for some texture, similar to the topping on my strawberry rhubarb crumb bars.
- A little tang: a few tablespoons of cream cheese swirled into the pumpkin filling before baking adds a nice contrast.
How to Make Pumpkin Pie Crumb Bars
Note: I bake by weight for accuracy. Cup measurements are approximate and may vary depending on how you scoop.

Step 1: Make the shortbread dough. Combine the flour, granulated sugar, and salt in a bowl, then stir in the melted butter and vanilla until a soft, crumbly dough forms.
Step 2: Press and par-bake the crust. Press about two-thirds of the dough into an even layer in the prepared pan, reserving the rest for the topping, and bake at 350°F for 12 to 15 minutes, until lightly golden around the edges.

Step 3: Make the pumpkin filling. Whisk the pumpkin puree and brown sugar together until smooth, whisk in the egg and egg yolk, then add the cream, vanilla, spices, salt, and flour and whisk just until combined.

Step 4: Assemble. Pour the filling over the warm crust and spread it evenly, then crumble the reserved dough over the top in large, chunky pieces.

Step 5: Bake and chill. Bake for another 30 to 35 minutes, until the crumble is golden and the filling is set around the edges with just a slight wobble in the center, then cool completely and refrigerate for at least an hour before slicing.
Weigh your ingredients! Using a kitchen scale ensures your measurements are accurate, which is key for getting consistent results in baking. It takes the guesswork out of measuring and helps your recipes turn out exactly as intended every time.
Expert Tips
- Use pumpkin puree, not pumpkin pie filling. Puree lets you control the sweetness and spice level yourself; pie filling is already sweetened and seasoned.
- Watch for a slight wobble, not a liquid center. The filling is a custard, so it keeps setting as it cools; pull the bars when the edges are set and the center only jiggles slightly.
- Don't skip the chill. These slice much more cleanly once the filling has fully cooled and firmed up in the fridge.
- Lift with the parchment. Leaving overhang on the pan lining makes it easy to lift the whole slab out in one piece before cutting.
- Compare it to a custard pie if you're unsure of doneness. The filling here sets up much like the pumpkin custard in my sourdough pie crust, so the same "gentle wobble, not liquid" rule applies.
What Makes This Recipe Special?
Most pumpkin bar recipes use a cakey base with the pumpkin baked directly into the batter, which loses the distinct custard texture that makes pumpkin pie pumpkin pie.
Par-baking a separate shortbread crust and pouring a true custard-style filling on top keeps that dedicated pie texture intact, layered underneath a crumble instead of a lattice, the same layered construction that makes my brownie crumb bars taste more like a real brownie than a bar cookie.

Pumpkin Pie Crumb Bars FAQs
The shortbread crust is part of what makes this a crumb bar rather than a pie bar, but a graham crust would work if that's the texture you prefer, similar to the base I use for my sourdough pumpkin cheesecake cookies.
Why is my filling still jiggly in the center after baking?
Yes, since they need to chill anyway, these are a good bake-a-day-ahead dessert.
Yes. Because the center is a custard-style pumpkin filling, they should be stored in the fridge rather than at room temperature.
Pumpkin Pie Crumb Bars Troubleshooting Guide
| Problem | Cause | Fix |
|---|---|---|
| Filling is watery or never fully sets | Underbaked, or too much liquid was added | Bake until the edges are set and the center has only a slight wobble |
| Crust is soggy | Filling was poured over a crust that wasn't par-baked long enough | Par-bake until lightly golden and dry on top before adding the filling |
| Crumble sank into the filling | Topping pieces were too small, or filling was too thin | Keep crumble pieces large and chunky so they sit on top instead of sinking |
| Bars fall apart when sliced | Bars weren't chilled long enough before cutting | Refrigerate for at least an hour, and use a sharp knife for clean slices |
| Filling cracked on top | Oven ran hot, or bars were overbaked | Bake just until the edges are set with a gentle wobble in the center, the same doneness cue I watch for in my chewy pumpkin cookies |
Storage
Store Pumpkin Pie Crumb Bars covered in the refrigerator for up to 5 days, the same as my pumpkin cream cheese cinnamon rolls.
Because the center is a custard-style pumpkin filling, these bars should be refrigerated rather than stored at room temperature.

Pumpkin Pie Crumb Bar
Equipment
- 8x8-inch baking pan
- Parchment Paper
- Medium mixing bowl
- Whisk
Ingredients
Shortbread Crust and Crumble
- 240 g all-purpose flour
- 200 g granulated sugar
- 170 g unsalted butter melted
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Pumpkin Pie Filling
- 245 g pumpkin puree
- 100 g light brown sugar packed
- 1 large egg
- 1 large egg yolk
- 90 g heavy cream
- 1 teaspoon vanilla extract
- 1½ teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon ground cloves
- ¼ teaspoon fine sea salt
- 8 g all-purpose flour
Instructions
- Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving enough overhang to easily lift the bars from the pan.
- In a medium bowl, combine the flour, granulated sugar, and salt. Stir together the melted butter and vanilla, then pour into the dry ingredients and mix until a soft, crumbly dough forms.240 g all-purpose flour, 200 g granulated sugar, 170 g unsalted butter, ½ teaspoon salt, 1 teaspoon vanilla extract
- Press approximately two-thirds of the dough firmly and evenly into the bottom of the prepared pan, reserving the remaining dough for the crumble topping.
- Bake the crust for 12-15 minutes, until lightly golden around the edges and dry on top. Remove from the oven and let cool for about 5 minutes while you prepare the pumpkin filling.
- In a medium bowl, whisk together the pumpkin puree and brown sugar until smooth. Add the egg and egg yolk and whisk until completely incorporated.245 g pumpkin puree, 100 g light brown sugar, 1 large egg, 1 large egg yolk
- Add the heavy cream, vanilla, cinnamon, ginger, nutmeg, cloves, salt, and flour. Whisk just until the filling is smooth and evenly combined.90 g heavy cream, 1 teaspoon vanilla extract, 1½ teaspoons ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, ⅛ teaspoon ground cloves, ¼ teaspoon fine sea salt, 8 g all-purpose flour
- Pour the pumpkin filling over the warm par-baked crust and spread it into an even layer.
- Crumble the reserved shortbread dough evenly over the pumpkin filling, keeping some pieces fairly large for chunky, bakery-style crumbles.
- Return the pan to the oven and bake for 30-35 minutes, or until the crumble is lightly golden and the pumpkin filling is set around the edges. The very center can have a slight wobble but should not look wet or liquid.
- Transfer the pan to a wire rack and let the bars cool completely, then refrigerate for at least 1 hour before cutting for the cleanest slices.
- Lift the bars from the pan using the parchment paper and cut into 9 large squares.
Notes
- Use pumpkin puree, not pumpkin pie filling; canned pumpkin puree gives you control over the sweetness and spices.
- Don't overbake the filling. Pumpkin custard continues setting as it cools, so remove the bars when the edges are set and the center has only a slight wobble.
- Keep the crumble chunky. Larger pieces give the bars that signature crumb-bar appearance and create a better contrast against the creamy pumpkin filling.
- Chill before slicing. These bars are much easier to cut cleanly once the pumpkin filling has completely cooled and chilled.
